We are a school district that needs event registration solution. I'm thinking this might work for us.
Once or twice a year we hold a competition where various schools signup to compete.
We need to collect the teachers registration info and the names of the students they will be bringing with them. I think with your custom fields we can do it.
The big problem I am having is with the teacher needing to re-edit some of this info later. Like change the students names. Can your product allow for this? Most event software will not do this. I don't want to do all the editing myself as an admin.

Actually I think what you want is RSVP Pro which is available to Gold Members.
With this, the users can indeed edit the registration up to whatever point you allow. You can set the cancellations/modification closing time.

yes you can and you have a number of options:
If the teacher is the event creator (or an event admin) they will see the list of attendees by default and you can configure the addon to show the list of attendees to:
* the public
* invitees or
* just to the event creator/admin users
