My membership site has online courses (members can take the courses for free). I'm interested in RSVP Pro, but it's not clear what the user has access to. For example, a member may take 12 courses over a period of years. Can they see a record of past courses they've taken, and is it possible for users to mark courses/events as completed?

Welcome to JEvents!
Yep they can sure do all that. You just need to install RSVP Pro, configure it and also install the User Specific Events Plugin. Once that is installed, you can then filter menu items based on Events Attended, Events Attending, Events Invited etc etc.
