I have 20 categories defined in the category tree yet when I 'Add an event' I only get 3 options from which to choose. I know I'm missing something and I hope someone can throw me a lifeline :-).

This sounds like your menu item is configured to a set of categories? You can edit the menu item and remove them all to show all, or add the additional ones you want to see :-).
