Is there a way to integrate the Latest Events into an email template? The idea is to be able to have a list of upcoming events automatically inserted into an html formatted email.

There sure is! you can use Acymailing and our acymailing plugin.

Or you can use the JEvents Remote Module loader. although I highly suspect email clients might not like you including a site via an iframe.
