My version is this:
I am listing the latest event module and it's showing as a table with <tr><td>
Is there a way to show it as <ul> <li>?

Joomla : 2.5.8
component_com_jevents : 2.2.8
module_mod_jevents_cal : 2.2.8
module_mod_jevents_latest : 2.2.5

I think the only JEvents Layout that does not provide latest module output as a table, but divs is iconic, You may check it at the Demo page:

If you do not want to get this layout, you should create a template overrides for the module layout to get rid of the table.

You could also create a template override to remove the table
